Shrimp and Rice Party Casserole Recipe sautees shrimp, green pepper, onions and garlic in vegetable oil before adding cooked rice, mushrooms and tomato juice and baking to make this very tasty shrimp and rice casserole recipe.

INGREDIENTS

  • 1 1/2 lb. cleaned fresh shrimp, chopped
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped onions
  • 2 cloves of garlic, crushed
  • 2 tbsp. vegetable oil
  • 1 4-oz. can sliced mushrooms, drained
  • 3 c. cooked rice
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. tomato juice

DIRECTIONS

  • Saute the shrimp, green pepper, onions and garlic in the oil in a skillet until vegetables are tender but not brown. Stir in remaining ingredients and place in a casserole. Bake at 375 degrees for 25 minutes or until heated through.
