INGREDIENTS

  • 2 pounds Flounder fillets, fresh or frozen
  • 1 can crushed pineapple (8 ounces) in natural juice
  • 1/3 cup low-calorie Russian dressing
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon cloves
  • 1/2 cup grated mild Cheddar cheese
  • Paprika

DIRECTIONS

  • Thaw fish if frozen. Place fish in single layer in a shallow baking dish. Drain pineapple, reserving juice. Combine dressing, reserved pineapple juice and seasonings. Pour sauce over fish and let stand for 30 minutes, turning once.
  • Remove fish, reserving sauce for basting. Place fish skin side up on a well-greased broiler pan. Broil about 4 inches from source of heat for 3 to 4 minutes. Turn carefully and brush with remaining sauce. Broil 3 to 4 minutes longer or until fish flakes easily when tested with a fork.
  • Combine pineapple and cheese. Spread pineapple mixture over fish and sprinkle with paprika.
  • Broil 2 to 3 minutes longer or until lightly browned.
