INGREDIENTS

  • 1 to 1 1/2 lbs. chicken breast, boneless and skinless
  • 1/2 cup Mexican beer
  • 2 Tbl. fresh lime juice
  • 1 clove garlic, minced
  • 2 tsp. ground cumin
  • 1 large onion, sliced into 1-inch rounds
  • 1 bell pepper, stemmed, seeded and quartered
  • vegetable oil for brushing
  • salt and pepper to taste
  • tortillas, optional

DIRECTIONS

  • In a sealable bag, combine the beer, lime juice, garlic and cumin. Add the chicken.
  • Seal the bag and toss to cover the meat. Marinate in the refrigerator for at least 1 hour or up to 8 hours.
  • Prepare a hot fire in your grill and heat a cast iron skillet on the stove top until very hot. Remove the chicken from the marinade, pat it dry and discard the marinade. Brush the onion slices, bell pepper and chicken with the vegetable oil. Season to taste.
  • Grill the onion and bell pepper for 5 - 7 minutes per side or until charred and softened. Grill the chicken for 4 - 5 minutes per side or until done. Let the chicken rest for 5 minutes, then slice on the diagonal and serve with the grilled vegetable and tortillas.
