INGREDIENTS

  • 4 chicken leg thigh quarters
  • 1/2 tsp salt
  • 1 cup sriracha
  • 1/2 cup honey
  • 4 Tbl lime juice
  • 4 tsp garlic, minced fine

DIRECTIONS

  • Preheat oven to 350°F.
  • Salt chicken quarters. Combine sriracha, honey, lime juice and garlic in a bowl. Stir to mix well. Reserve 4 Tbl sauce, set aside.
  • Coat chicken quarters with sauce in bowl, front and back. Place quarters on a pan with rack leaving space between the quarters. Place pan on middle rack of oven.
  • Cook chicken for 45 minutes or until juices run clear when quarters are pierced with sharp knife or internal temperature reaches 170°F. Serve with rice drizzled with reserved sauce.
