INGREDIENTS

  • 1 tsp vegetable oil
  • 1/2 cup onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup red bell pepper, thinly sliced
  • 2 tsp curry paste
  • 1/2 tsp ginger root, finely grated
  • 1/4 tsp salt
  • 1 cup coconut milk
  • 6 ounces shrimp, peeled and deveined

DIRECTIONS

  • Heat vegetable oil n medium frying pan over medium heat.
  • Add onion and garlic. Cook for about 5 minutes, stirring often, until onion is softened.
  • Add next 4 ingredients. Heat and stir until bell pepper has slightly softened.
  • Add coconut milk, stir to mix well. Bring to a boil. Add shrimp and cook for about 3 minutes until shrimp turn pink. Serve over rice or pasta. Makes about 2 cups. Serves 2.
