Tomato and Mozzarella Toasts Appetizer Recipe resemble mini-pizza and use sfilatini (thin ciabatta), sun-dried tomato purée, mozzarella cheese, oregano, olive oil and black pepper to make this tasty appetizer recipe.

INGREDIENTS

  • 3 sfilatini (thin ciabatta)
  • about 1 cup sun-dried tomato purée (paste)
  • 3 x 5 oz packets mozzarella cheese, drained and chopped
  • about 2 tsp dried oregano or mixed herbs
  • 2 to 3 tbsp olive oil
  • ground black pepper

DIRECTIONS

  • Preheat the oven to 220°C/425°F. Also preheat the grill (broiler). Cut each sfilatino on the diagonal into 12 to15 slices, discarding the ends. Grill (broil) until lightly toasted on both sides. Spread sun-dried tomato purée on one side of each slice of toast. Arrange the mozzarella over the tomato purée.
  • Put the toasts on baking sheets, sprinkle with herbs and pepper to taste and drizzle with oil. Bake for 5 minutes, or until the mozzarella has melted and is bubbling. Leave the toasts to settle for a few minutes before serving.
  • COOK'S TIP: Mozzarella can also be bought as tiny balls. If you prefer to use these, just halve them and place on top of the tomato purée.
