INGREDIENTS

  • 1 1/2 C chopped left over turkey
  • 2 1/2 C diced boiled potatoes
  • 2 T butter
  • 1 T minced parsley
  • Salt and pepper to taste
  • 1 1/2 C turkey stock

DIRECTIONS

  • Remove turkey meat from bones and put the stripped bones in a small amount of water, barely enough to cover and simmer 1 hour.
  • Combine chopped meat with the diced potatoes and brown in the butter which has been melted in a skillet.
  • Add parsley, seasonings, and the stock obtained by simmering the bones.
  • Cook slowly for 20 minutes, stirring occasionally, until flavors are blended and moisture is evaporated to desired point. Serve hot. 5 servings.
