ABOUT CAKES

Success in baking "perfect" cakes - even-grained, tender, and delicately flavored - is not a matter of luck or due to a knack for baking. Even a beginner can be proud of their endeavours in the cake-baking field if they use superior quality ingredients and carefully follow a few proved rules of cakebaking. That means following the directions carefully for correct measuring methods for ingredients, the particular method of mixing, the right sizes of pans, and making sure that their oven thermostat is working correctly.

Cakes may be divided into three basic types: (I) those made with shortening (the conventional or one-bowl "quickmethod" cakes), still commonly called "butter" cakes because originally butter was the shortening most frequently used and now largely replaced by hydrogenated vegetable shortening; (2) those made without shortening (the angel and sponge cakes); and (3) a combination angel and shortening-type cake (the chiffon cake). Although they are different in ingredients, in the way they are mixed, and in their final appearance and texture, nevertheless many rules for cakemaking apply to all three.
