INGREDIENTS

  • 8 ounces fresh asparagus
  • salt
  • ground black pepper
  • 1/4 cup butter, melted
  • squeeze of fresh lemon juice
  • 2 eggs, hard-cooked and chopped
  • 1 tablespoon chopped fresh chervil

DIRECTIONS

  • Trim the asparagus stalks and peel off the tough outer layers at the base with a vegetable peeler.
  • Poach the asparagus spears in lightly salted water, until just tender. This will take between 3-6 minutes. (Use a clean, deep frying pan if you don't have an asparagus steamer.)
  • Drain the asparagus well and arrange on two small plates or one large one. Season well.
  • Mix the melted butter with the lemon juice. Trickle over the spears, sprinkle with the eggs and garnish with the chervil. Serve warm.
