INGREDIENTS

  • 1 (4-pound) boneless chuck roast
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper

DIRECTIONS

  • Let the roast sit at room temperature for about 1 hour. This will greatly improve its cooking thoroughness. Preheat the oven to 450 degrees F.
  • In a small pan, combine the olive oil, garlic, rosemary, thyme, salt, and pepper. Heat olive oil mixture over low heat for about 5 minutes, stirring occasionally. Spoon the oil seasoning mixture over all the sides of the roast spreading the mixture with a basting brush.
  • Place the roast in a roasting pan fitted with a roasting rack; cover.
  • Roast the beef for 15 minutes, then reduce the heat to 325 degrees F and roast, checking the internal temperature with an instant read thermometer until the desired temperature is reached. Remove the roast from the oven and let it rest for about 15-30 minutes. Serve warm!
