INGREDIENTS

  • 2 cups fresh black-eyed peas
  • 2 tbsp unsalted butter
  • 1/2 medium onion, chopped
  • 1/2 tsp garlic powder
  • 1 tsp chicken bouillon powder
  • Water for braising

DIRECTIONS

  • Melt butter in a sauce pan over medium heat. Add the onion and sauté until the onion is soft.
  • Add the peas to pan. Add 1 cup of water and stir all to mix well. Turn heat to high and bring to a boil. Once at a boil, reduce heat to bring the liquid to a low simmer. Simmer for 20 minutes adding water as necessary.
  • Check peas occasionally to determine how tender the peas have become. Continue cooking, adding water as necessary, until the peas are of desired tenderness.
  • Once peas are tender, add the garlic powder and bouillon to the pan. Stir all to mix well. Cook for at least 5 minutes or until most of the liquid has cooked from the dish. Serve and enjoy.
