INGREDIENTS

  • 4 bone-in pork chops about 6 ounces each
  • 2 tsp lemon pepper seasoning

DIRECTIONS

  • Prepare charcoal fired grill as normal but keep the heat in the medium range; do not want the fire real hot.
  • Pat the pork chops dry with paper towels.
  • Sprinkle both front and back of the chops moderately with lemon pepper seasoning. Place the chops onto the hot grill rack.
  • After the chops have been on the grill for a few seconds, lift each chop to ensure they are not sticking to the grill. Cook the first side for 3 minutes. Flip each chop over and cook for 2 minutes. Flip the chops over. Check the internal temperature of the chops with an instant read thermometer. Keep flipping the chops ever two minutes until the internal temperature of the chops reach 165°F. Remove the chops from the grill and let rest for 5 minutes before serving. Chops will continue to cook once removed from the fire.
