INGREDIENTS

  • 2 pounds chicken breasts with skin and bone-in
  • 1 tablespoon sage
  • salt, to taste
  • pepper, to taste
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (32-ounce) package frozen cubed hash browns
  • 8 ounces cheddar cheese, shredded
  • 1 cup French fried onions, divided
  • 1 cup frozen veggies
  • 1/2 cup butter, melted
  • 8 ounces sour cream

DIRECTIONS

  • Preheat the oven to 400 degrees F. Grease a 9x13-inch baking dish. Place the chicken into a pot large enough to cover the chicken with water and bring to a boil. Boil for 12-14 minutes and cook until the chicken reaches an internal temperature of 160°F. When done, remove to a plate to cool, reserving the remaining broth. When the chicken has cooled sufficiently to handle, remove the skin and the bones from the breasts. Use two forks to shred the breast meat.
  • In a large bowl, mix the cream of chicken soup, the chicken broth reserved from cooking the chicken and whisk to break down the soup in the broth. Add the hash browns, the cheese, 1/2 cup of the French fried onions, the veggies, the melted butter, and the sour cream together and stir to mix well.
  • Pour the chicken mixture into the prepared baking dish and top with the remaining French fried onions. Cover the dish with foil and bake until the hash browns are cooked through, about 30-45 minutes.
  • Uncover and bake the casserole until bubbly, about 5 minutes. Serve.
