INGREDIENTS

  • 1 pound chicken livers
  • 1 cup House-Autry Chicken Seasoned Breading Mix.
  • Vegetable oil, for frying

DIRECTIONS

  • Thaw the chicken livers if frozen. Place the thawed livers into a colander and rinse with cold water. If livers are large, you might consider cutting them in half. Remove any fat deposits from the livers.
  • Heat 4 or 5 inches of oil in a large pot until the oil is 350°F. May have to cook in two or three batches - don't crowd. Note: Any flour mixture you prefer will work to fry the livers, however, House-Autry Seasoned Breading Mix gives a great flavor, texture and taste to all fried chicken dishes. ALSO, some chicken livers will literally explode after being in hot oil for a minute or so, be prepared and if you have one, by all means use a grease splatter screen and place over the pot.
  • Just prior to the oil getting to cooking temperature, begin to coat the livers with the breading mix. When the oil is hot enough, slowly and carefully drop individual livers into the oil placing them in the oil with an "away" from you movement to prevent oil from splashing back onto you. Cook the livers for 3 minutes.
  • With slotted spoon remove from the oil, place on a plate covered with paper towels and check with a thermometer. 170°F or better. No thermometer, cut into thickest part of largest liver to ensure no pinkness.
