INGREDIENTS

  • 3 whole chicken breasts
  • 1 lemon, quartered
  • 1/2 orange, quartered
  • 2 cloves garlic, split
  • 2 whole cloves
  • 1 bay leaf
  • 1/2 cup vegetable oil

DIRECTIONS

  • Cook lemon, orange, garlic, cloves and bay leaf in oil over medium heat in a heavy saucepan about 20 minutes or until skin of fruit is brown.
  • Allow mixture to cool. Pour mixture over chicken, tossing chicken to coat, and marinate 2 hours or overnight.
  • Heat large heavy skillet or medium heat. Remove chicken from marinade. Place chicken breasts into hot skillet; cook, uncovered, over medium heat.
  • Cook breasts for about 4 minutes and using tongs, turn the breasts over and cook for another 4 minutes before turning again. Continue cooking in this manner until internal temperature reaches 165°F. Add marinade, if necessary, to prevent sticking. Let breasts rest for 5 minutes before serving.
