INGREDIENTS

  • 1/2 lb. beef
  • 1/4 onion (chopped)
  • 1 10 oz. can whole green chilies
  • 1 1/2 cups cheddar cheese
  • 2 eggs
  • 3/4 cups milk
  • 1/8 cup flour
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp vegetable oil

DIRECTIONS

  • Heat the oven to 375°F. Brown the ground meat in a skillet over medium heat, breaking up any large clumps of the meat. Drain the meat in a colander. Set aside.
  • Add the oil to the skillet over medium heat. Add the onion and saute the onion, stirring occasionally, until the onion is soft. Return the meat to the skillet and stir to mix well. Add the cumin and salt and pepper to the meat mixture and stir to mix well.
  • Line the bottom of a 9-in. x 9-in. casserole dish with the green chilies. Reserve a couple of chilies and chop for later use.
  • Layer meat mixture over chilies in the casserole dish. Whisk together eggs and milk, then add flour and mix well. Pour this mixture over dish. Top with chopped chilies. Place dish into hot oven and bake for 35 to 40 minutes. About 5 minutes before removing the casserole from the oven, top the dish with the cheddar cheese and return the casserole to the oven to allow the cheese to melt, taking care to not burn the cheese.
