INGREDIENTS

  • 2 lb. stew beef cut into bite size pieces
  • 5 Tbsp vegetable oil
  • 1 large onion, chopped
  • 1 8.5 oz can water chestnuts, drained and sliced
  • 1 green pepper, cut into squares
  • 1 13 1/4 oz pineapple tidbits, undrained
  • 2 Tbsp catsup
  • 1 Tbsp soy sauce
  • 1 Tbsp cornstarch
  • 1/2 tsp sugar
  • 3 Tbsp cold water
  • 2 firm ripe tomatoes
  • Chow mein noodles

DIRECTIONS

  • Prepare meat with tenderizer. Heat 3 Tbsp vegetable oil to hot but not smoking. Quickly brown beef over high heat. Remove to platter.
  • Heat remaining 2 Tbsp oil in same skillet. Add onion, water chestnuts and green pepper. Stir-fry until crisp-tender, about 3 minutes.
  • Add undrained pineapple, catsup, vinegar, soy sauce and sugar. Stir to mix well. Heat to boiling.
  • Reduce mixture to a simmer. Mix cornstarch with cold water and stir well to dissolve the cornstarch. Add cornstarch mixture to skillet and stir to mix well. Stir continuously until the sauce clears and thickens. Return the meat to the skillet, stirring to mix well. Add the tomatoes and gently stir to mix well and to heat the tomatoes through. Serve over chow mein noodles.
