INGREDIENTS

  • 1 1/2 cups warm water
  • 2 Tbl butter, softened
  • 1/2 cup honey
  • 2 cups bread flour
  • 1 2/3 cups wheat flour
  • 1 Tbl cocoa
  • 1 Tbl granulated sugar
  • 2 tsp instant coffee
  • 1 tsp salt
  • 1 pkg. yeast
  • For Coloring:
  • 1/4 cup water
  • 75 drops red food coloring
  • 45 drops blue food coloring
  • 30 drops yellow food coloring

DIRECTIONS

  • Using Bread Machine: add all ingredients (not coloring ingredients) in the order given into the machine. Combine the food coloring with the water and mix well.
  • Set the machine to "knead" and when the machine has mixed the ingredients fairly well, drizzle the food coloring mixture into the dough as it kneads until all food coloring has been incorporated into the dough. After the dough is created, let it rest to rise for an hour or so. Remove the dough from the machine and proceeded to last step.
  • By Hand: Mix together well the flours, cocoa, sugar, coffee and salt in a large bowl. Make a "well" in the middle of the dry ingredients and into it add the warm water, butter, honey and yeast. Slowly mix, drawing the dry ingredients into the wet. When the dough can be handled, begin to knead the dough to combine all ingredients. Knead for at least 10 minutes, until smooth and consistent in color. Put the dough in a greased covered bowl and place in a warm place for an hour to rise.
  • When the dough has risen to about double in size, divide the dough into halves 3 times to make 8 equal portions. Form the portions into tubular shaped loaves about 8" x 2". Sprinkle entire surface of the loaves with cornmeal and place on a cookie sheet(s). Cover with plastic wrap and allow dough to rise for 1 hour. Preheat oven to 350°F. Uncover dough and bake for 20 - 24 minutes. Loaves should darken slightly on top when done. Loaves may be checked by inserting toothpick into center of loaf. A clean pick equals done.
