  • 1 lb ground beef
  • 1/2 onion, chopped
  • 1 package taco seasoning
  • 3/4 cup water
  • 2 large flour tortillas
  • 1 15 oz. can refried beans
  • 3 cups shredded taco cheese or cheddar cheese
  • 1 15 oz. can cream of mushroom soup
  • 4 ounces sour cream


  • Place hamburger meat into a large skillet and turn heat to medium. Break meat up with a wooden spoon while the meat cooks. Once meat is browned, drain the meat. Remove meat to a plate and set aside.
  • Return skillet to medium heat and add 1 tbsp vegetable oil. Add onion and sauté until onion is soft and translucent. Add the taco seasoning. Add the water and stir all to mix well. Return the meat to the skillet and stir to mix well. Add the refried beans and stir to mix well. Turn heat to low.
  • Preheat oven to 350°F. In a separate bowl, combine mushroom soup and sour cream and whisk to mix well. Set aside.
  • Spread 1/2 of the sour cream mixture on the bottom of a 1 1/2 quart casserole dish. Spread 1/2 of the meat mixture over the sour cream mixture. Spread 1 tortilla, torn into small pieces, over the meat mixture. Spread 1/2 of the cheese over the tortilla. Repeat the layers, reserving the remaining cheese. Place the casserole into the hot oven, uncovered, and bake for 25 minutes. Spread the remaining cheese over the top of the casserole and return to the oven for 5 minutes or until the cheese melts.
