INGREDIENTS

  • 4 flour tortillas
  • 1 lb. shrimp, shelled and deveined
  • 2 Tbsp coconut oil
  • 2 cloves garlic, finely chopped
  • 1 red chili pepper, deseeded and finely chopped
  • 1 cup mayonnaise
  • 1/2 lime, the juice
  • 1/4 cup fresh cilantro, chopped
  • 1 (7 oz.) avocado, diced
  • 1 (4 oz.) tomato, finely chopped
  • salt and pepper

DIRECTIONS

  • Sauté the shrimp in a hot pan with coconut oil, garlic and chili until the shrimp have turned a nice pink color. Salt to taste. Set aside and let cool.
  • Mix all other ingredients and add fried shrimp. Mix well.
  • Stack the tortillas and place on a large place. Moisten a paper towel and spread over the tortillas. Place tortillas into a microwave and microwave on high for 30 seconds.
  • Place one tortilla onto a plate. Spread shrimp mixture from left to right across the center of the tortilla leaving 2 inches on either side of the tortilla without shrimp mixture. Bring the bottom edge of the tortilla up and over the shrimp mixture. Take the left and right edges of the tortilla, without shrimp, and close toward the center over the shrimp. Roll the tortilla toward the top edge to form a rolled tortilla.
