INGREDIENTS

  • 2 pounds chicken breasts
  • 1 (1-ounce or less) packet ranch dressing mix
  • 1 (8-ounce) block cream cheese
  • 1 cup cheddar cheese, shredded
  • 1/2-3/4 cup bacon, cooked and crumbled
  • 4 green onions, sliced
  • 8 hamburger buns, to taste, for serving

DIRECTIONS

  • In a slow cooker, add the chicken and sprinkle with the ranch dressing mix. Place the cream cheese on top of the chicken. Pour 1/2 cup water onto the bottom of the pot.
  • Cover the slow cooker and cook on low heat until the chicken is cooked through and tender, about 3 - 4 hours. Check the internal temperature of the chicken with an instant read thermometer. When the temperature reaches 165°F, remove the chicken from the cooker and place onto a cutting board.
  • Use two forks to shred the chicken into thin strips. Stir the mixture in the pot to break up and clumps of cheese. Stir until the mixture is a smooth soup. Add the chicken to the pot and stir to coat the chicken with the soup. Add the cheese and stir to distribute the cheese throughout the chicken as it melts.
  • Add the bacon to the chicken mixture and stir to distribute the bacon throughout the chicken mixture. Serve the chicken mixture, topped with green onions, on the buns.
