INGREDIENTS

  • 1 1/2 lbs. chicken breast, cubed
  • 1/2 cup unsweet coconut milk
  • 2 Tbl. creamy peanut butter
  • 2 Tbl. cilantro greens, chopped
  • 1 Tbl. coconut oil
  • 1 medium onion, chopped
  • 1 tsp. Kosher salt
  • 1 Tbl. garlic, minced
  • 1 Tbl. fresh ginger, grated
  • 1 Tbl. curry powder
  • 1/8 tsp. cayenne pepper

DIRECTIONS

  • Heat the coconut oil in a skillet over medium heat. Add the onion and salt and sauté the onion until translucent, 4 - 5 minutes.
  • Add the garlic, ginger, curry, and cayenne and sauté for about a minute. Add chicken and stir well to coat chicken thoroughly with spices.
  • Cook chicken, moving around in the spices for about 3 minutes. Add the coconut milk, stir well to combine all. Add the peanut butter and stir well to dissolve the peanut butter in the milk.
  • Cover and simmer until chicken is done. Serve over rice or noodles, as desired.
