INGREDIENTS

  • 2 9-in deep dish pie crust
  • 8 medium tomatoes
  • 1 1/2 cups mayonnaise
  • 1/2 cup sour cream
  • 2 cups cheddar cheese, shredded
  • 2 cups mozarella cheese, shredded
  • 6 green onions, cut into 1-inch sections
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 12 large fresh basil leaves
  • oregano, leaves

DIRECTIONS

  • Brown the pie crusts per package instructions. Peel and core the tomatoes. Slice the tomatoes and place into colander in layers, salting each layer as it is placed into the colander. Let tomatoes drain for at least 45 minutes.
  • Heat the oven to 350°F. Place the cheese, mayonnaise, and sour cream into a large bowl and stir to mix well.
  • Place 1/4 of the tomatoes in a single layer into each of the pie crust. Spoon 1/4 of the cheese mixture into each of the pies on top of the tomatoes. Spread the cheese mixture to cover the tomatoes well. Spread 1/2 of the onions onto the cheese mixture cover the pie well. Place 6 basil leaves in a single layer on top of the cheese mixture. Place 1/2 of the remaining tomatoes into each of the pies on top of basil. Salt and pepper the pies to taste.
  • Spoon 1/2 of the remaining cheese mixture into each of the pies on top of the tomatoes. Spread the cheese mixture to cover the pies well. Sprinkle the top of each pie with oregano leaves. Place both pies on a large sheet pan and place on the middle rack in the oven. Bake the pies for 25 minutes or until golden brown. Remove the pies to wire racks. Serve warm or allow to cool before serving.
