INGREDIENTS

  • 12 squid, cleaned, with their tentacles left on
  • Flour seasoned generously with salt and pepper
  • Vegetable oil for deep frying
  • 3 lemons, cut in wedges

DIRECTIONS

  • Rinse the cleaned squid in cold water and pat dry with paper towels. Dip the squid into the seasoned flour and coat all surfaces evenly.
  • Heat the oil in a deep fryer to 375°F. Drop in the squid, a few at a time. Fry until golden brown (about 5 minutes).
  • Transfer the squid with a slotted spoon to a baking dish lined with paper towels. Keep in a 200°F oven until all the squid are fried.
  • Remove paper; serve squid with lemon.
