INGREDIENTS

  • 4 medium Yukon gold potatoes, thinly sliced
  • 8 ounces ham, cooked and cubed
  • 1 medium green sweet pepper, chopped
  • 1 small sweet yellow onion, chopped
  • 1 cup Colby and Monterey Jack cheese, shredded and mixed

DIRECTIONS

  • Preheat the oven to 350 degrees F. Grease a 2-quart baking dish.
  • Layer 1/2 of the potatoes, 1/2 of the ham, 1/2 of the green pepper, 1/2 of the onion, and 1/2 of the cheese in that order in the prepared baking dish.
  • Layer on the remaining ham, the remaining sweet pepper, and the remaining onion in the baking dish. Top the casserole with the remaining potatoes in an even layer. Cover the casserole and bake for 45 minutes.
  • Uncover and continue baking until the potatoes are tender, about 15 minutes. Sprinkle the remaining cheese on top of the casserole and bake until melted, about 5 minutes. Serve hot.
