INGREDIENTS

  • 2 1/4 cups all-purpose flour
  • 1 tsp. sugar
  • 2 tsp. salt
  • 1 tsp. dry active yeast
  • 1 cup warm water, approximately 105°F
  • olive oil, for coating cooking pan
  • pepperoni slices, approximately 80
  • 8oz mozzarella cheese, cubed about 1/2-inch
  • Exquisite Pizza Sauce recipe, 1 order
  • cornmeal or cornmeal mix for dusting
  • 9-in. x 13-in. pan with sides 2 to 3-in. high

DIRECTIONS

  • Search for Exquisite Pizza Sauce on this site and make one recipe of the sauce. Place water in a small bowl along with the salt and sugar. Add the yeast and stir to mix. Set aside for the yeast to proof.
  • Place all-purpose flour into the bowl of a food processor. After the yeast has proofed and become foamy, add to the flour in the processor bowl. Pulse to combine and form a ball of dough.
  • Remove dough from processor bowl and place in a grease bowl. Cover with a towel and set aside to double in size. Dust the bottom of the 9-inch x 13-inch pan with cornmeal. Place the dough into the bottom of the pan and mold dough to cover the entire bottom of the pan and up the sides of the pan at least 1/2 way up the sides.
  • Preheat oven to 500°F. Once dough is in place, cover the dough on the bottom of the pan with pepperoni slices. Place mozzarella cubes over the pepperoni slices, covering all, but do not pile cheese. Place three evenly spaced lines of pizza sauce down the entire length of the pizza, side by side. Cover the sauce lines with slices of pepperoni. Place pizza on bottom rack of oven and cook for 15 to 20 minutes. Check the dough in the center of the pizza with thermometer to ensure it is at least 210°F. Enjoy!!
