INGREDIENTS

  • 2 cups dry pinto beans
  • 8 to 10 cups water
  • 2 tablespoons lard or oil
  • 2 teaspoons salt, or to taste

DIRECTIONS

  • Pick through and wash the beans. Do not soak.
  • Place beans, water, and lard in a large pot. Bring to a boil, reduce heat, cover, and simmer until the skins have begun to split (2 to 2 1/2 hours). Add the salt and continue to cook until the beans are very tender (about 30 minutes longer).
