  • 2 pounds yellow turnips, pared and cubed
  • 1 tablespoon minced onion
  • 1 1/4 cups beef stock
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon sugar
  • 2 teaspoons soy sauce


  • Combine all ingredients in a saucepan; simmer covered until turnips are tender (about 15 minutes).
  • Drain; mash turnips with potato masher or electric mixer until fluffy; adding cooking liquid as needed for desired consistency.
