INGREDIENTS

  • 4 firm white fish fillets of choice, 4 - 6 oz each
  • 1 1/2 cups shredded iceberg lettuce
  • 8 Tbsp tartar sauce
  • 2 tsp Old Bay® Seasoning
  • 4 large hamburger buns
  • 4 Tbsp margarine
  • 1 tsp granulated garlic
  • 1 Tbsp vegetable oil
  • sliced onion, optional

DIRECTIONS

  • Turn an electric griddle to 350°F or place a heavy bottomed skillet over medium heat. Spread margarine over cut sides, both tops and bottoms, of the buns. Lightly sprinkle the margarine with granulated garlic.
  • Lightly sprinkle the fillets with the seasoning.
  • When the griddle has reached temperature, spread the oil over the griddle in a thin film coat. Place the fillets onto the griddle and move around gently to prevent sticking. Cook fillets for 3 minutes. Using a large spatula, gently flip each fillet over to cook the second side. After 2 minutes, gently flip the fillets over.
  • Check the fillets with an instant read thermometer. Remove the fillet from the griddle at 155°F. Cover the fillets to retain heat. Place the buns onto the griddle, cut side down. The buns should brown fairly quickly. Once browned, plate the buns and cover the tops and bottoms with tartar sauce. Place a fillet onto the bottom of a bun, top with shredded lettuce. Add sliced onion, if desired.
