INGREDIENTS

  • 3 1/2 cups ap flour
  • 1/4 cup brown sugar
  • 2 tsp instant yeast
  • 1 tsp salt
  • 1 egg, beaten
  • 1 cup pineapple juice
  • 1 tsp vanilla extract
  • 1/4 cup butter, softened
  • For Wash:
  • 1 egg, beaten
  • 2 Tbsp milk

DIRECTIONS

  • Put flour, sugar, yeast and salt into a stand mixer bowl and stir to mix well. Add egg, juice and vanilla to the bowl and mix with dough hook on speed 1 for 2 minutes. Increase speed to 2 and knead for 7 minutes.
  • Add the butter to the bowl with the mixer running. Once the butter is fully incorporated, form the dough into a smooth round ball and place into an oiled bowl. Lightly oil the exposed surface of the dough ball. Cover the bowl with plastic wrap and rest the dough until double in size. Gently press the dough to allow any gases to escape.
  • Flatten the dough out and divide into 16 equal portions. Gently fold each portion under itself and form a smooth surfaced ball with each portion. Place portions side by side in 4 x 4 arrangement and cover with a towel for 15 minutes. Flatten each ball to release any gas. Fold the edges of the dough into the center and then pinch all together sealing the seam. Turn the seam side down on the counter and roll the dough lightly around under your hand forming a smooth surfaced ball.
  • Place the dough balls into a square pan in the 4 x 4 arrangement and allow to rise for 30 minutes. Brush each roll with egg wash. Bake rolls in a preheated 355 degree oven for 20 - 25 minutes. Move pan with rolls to a wire rack. Brush rolls with salted butter while they are still hot.
