INGREDIENTS

  • 1 Tbl. Shaoxing wine or dry sherry
  • 1/2 tsp. salt
  • 1 tsp. light soy sauce
  • 1 tsp. dark soy sauce
  • 1 Tbl. potato starch or flour
  • 12oz boneless beef short ribs or other beef steak
  • 1 3/4 cup peanut oil
  • 2 tsp. minced ginger
  • 1 Tbl. finely chopped garlic
  • 2 fresh red chilies, seeded and finely chopped
  • 2 to 4 tsp. dried red pepper flakes
  • 2 tsp. ground cumin
  • 2 scallions, green parts only, finely chopped
  • 1 tsp. sesame oil

DIRECTIONS

  • In a bowl, mix wine, salt, soy sauce, potato starch or flour and one tablespoon of water. Stir well to dissolve all. Cut beef across the grain into thin slices. Add beef to marinade and stir and mix to coat the beef well. Set aside for at least 30 minutes.
  • In a bowl, combine minced ginger, garlic, red chilies, dried pepper flakes and cumin. Finely slice the green tops of the scallions and set aside.
  • In a wok, or large skillet, heat oil to 275°F. Add beef and stir gently for 2 to 3 minutes. Remove beef with slotted spoon and drain well. Pour off all but 3 tablespoonful of oil. Over high heat add the ginger/garlic mixture and stir-fry briefly until they are fragrant.
  • Return beef to wok and stir well, seasoning with salt to taste. When beef is sizzling and fragrant, add scallion greens and toss briefly. Remove wok from heat and stir in sesame oil. Serve over noodles or rice.
