INGREDIENTS

  • 3 tomatoes, chopped
  • 1/2 large cucumber, seeded and chopped
  • 1/2 small red onion, finely chopped
  • 1 cup mint leaves, chopped
  • 1 cup unsweetened yogurt

DIRECTIONS

  • Remove the stem end of the tomatoes and then chop them into 1/2 inch cubes.
  • Peel 1/2 of a large cucumber. Using a spoon, scrape the seed out of the cucumber. Chop the cucumber into the same size cubes as the tomatoes.
  • Peel a small red onion. Finely chop 1/2 of the onion. Chop the mint leaves.
  • Place the tomatoes, cucumber, onion, and mint into a mixing bowl. Add the yogurt to the vegetables and stir all to mix well. Refrigerate for at least 45 minutes before serving.
