INGREDIENTS

  • 1 pound pinto beans , rinsed and drained
  • 2 tablespoons lard
  • 1 large onion, roughly diced
  • 1/2 - 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 4 cloves garlic , minced
  • 4 cups unsalted chicken stock
  • Salt to taste
  • For Garnish, all optional:
  • Cilantro, roughly chopped
  • Jalapeno, sliced or diced
  • Green onions, chopped
  • Tomato, diced
  • Lime, sliced or wedges
  • Feta cheese

DIRECTIONS

  • Put Instant Pot into sauté mode. When hot add the lard. Once the lard melts, add the onion. Stir well to coat the onion with the lard. Stir occasionally until the onion is soft and translucent. Add the garlic and stir well.
  • Add the chili powder, cumin, and oregano individually stirring well after each addition. Add the pinto beans and the chicken broth. Press the cancel button on the Instant Pot to take the Pot out of sauté mode. Place the lid onto the Instant Pot.
  • For tender but with a bite refried beans press the Pressure Cook button and set the time to 40 minutes. Turn off the Keep Warm button. For silky smooth and tender refried beans press the Pressure Cook button and set the time to 50 minutes. Turn off the Keep Warm Button. After the beans cook, allow the Instant Pot to Natural Release for 25 minutes. Slowly and carefully turn the Venting Knob to the vent position to release any remaining pressure. Open the lid of the Instant Pot.
  • Carefully open the lid. Strain beans liquid with a strainer. Place beans into a large bowl. Keep the beans liquid in a mixing bowl. Make refried beans by mashing the beans with a potato masher or immersion blender until desired consistency. Taste and season with salt. Adjust the thickness by adding the drained beans liquid back to the refried beans until your desired consistency. Garnish with your favorite toppings. Serve and enjoy!!
