INGREDIENTS

  • 3 tablespoons fajita seasoning mix, divided
  • 1 pork tenderloin roast
  • 2 tablespoon olive oil
  • 1 (14.5-ounce) can fire-roasted tomatoes, undrained
  • 1 large red onion, chopped
  • 1 1/2 cups fresh poblano peppers, seeded and chopped
  • 1/4 cup beef broth
  • 1 teaspoon chili powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • rice, to taste, cooked and warm, for serving
  • chipotle hot sauce, to taste, for serving

DIRECTIONS

  • Use 2 tablespoons of the fajita seasoning and thoroughly coat the tenderloin with seasoning. Heat a skillet over medium-high heat. When the skillet is hot, add the olive oil and swirl the oil around the bottom of the skillet to coat well. Add the tenderloin to the skillet and brown all sides of the tenderloin well. Place the tenderloin into the pot of the slow cooker.
  • Return the skillet to heat and add the onion. Sauté the onion, stirring frequently, until the onion is slightly browned and is translucent. Remove the onion from the skillet and set aside. If necessary, add a little oil to the skillet returning the skillet to heat. Add the pepper and sauté until the pepper is soft.
  • In a bowl, combine the tomatoes, onion, pepper, broth, chili powder, cumin, garlic powder and cayenne pepper. Stir to mix well. Pour the tomato mixture over the tenderloin. Cook the tenderloin on low for 3 - 4 hours, checking the internal temperature of the tenderloin with an instant read thermometer. Cook the tenderloin to at least 145°F. Transfer the cooked tenderloin roast from the slow cooker to a cutting board, and let it cool slightly.
  • With a sharp knife, cut the cooked pork tenderloin roast into bite-sized pieces and transfer the pieces back to the slow cooker to heat through. Plate the pork tenderloin pieces with the cooked rice and the chipotle hot sauce. Serve.
