INGREDIENTS

  • 4 chicken breasts, boneless and skinless
  • For marinade:
  • 8 ounces cream cheese, softened
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp oregano
  • 1 tsp salt
  • 1 egg
  • Juice of 1 lime
  • For coating:
  • 2 cups flour
  • 1/2 Tbsp paprika
  • 1/2 Tbsp black pepper
  • 1/2 Tbsp oregano
  • 1/2 Tbl salt

DIRECTIONS

  • Combine 1 tsp each turmeric, paprika, black pepper, oregano and salt and stir to mix well. Combine turmeric mixture with the cream cheese and stir to mix well. Add egg and juice of 1 lime. Stir to mix well.
  • Place chicken breasts into a large dish and cover with cheese mixture. Stir to coat the chicken well with the cheese mixture. Cover dish with plastic wrap and refrigerate for 30 minutes.
  • Combine flour with 1/2 Tbl each of paprika, black pepper, oregano and salt. Stir to mix well. Remove breasts from the dish and place into flour mixture to coat well. Place breaded breast on a plate. Set aside.
  • Heat vegetable oil in a large skillet over medium-high heat. When oil begins to shimmer, slowly add chicken breasts. Cook breast about 3 minutes on first side before carefully turning breasts over and cooking 2nd side. Repeat turning breasts every two minutes until internal temperature of breasts reach 165 degrees F.
