INGREDIENTS

  • 1 1/2 cups House-Autry seafood seasoning
  • 2 tablespoons olive oil
  • 1 envelope pesto sauce mix
  • 1 tablespoon lemon juice
  • 6 halibut fillets (4 ounces each)
  • Salt and pepper, to taste

DIRECTIONS

  • Season the halibut fillets with salt and pepper. Coat each fillet well with seafood breading.
  • Place a large skillet over medium-high heat. Once skillet has heated, add 2 tbsp olive oil and swirl to coat the bottom of the skillet well. When the oil shimmers, place the fillets into the skillet. Move the fillets around to prevent from sticking. Cook the fillets for about 3 minutes and flip to other side. Move to prevent sticking.
  • Prepare the pesto according to package instructions, adding 1 tbsp of lemon juice. Turn fillets every two minutes.
  • Check the fillets with an instant read thermometer. Remove fillets to a serving platter when fillets reach 150°F.
