INGREDIENTS

  • 8 oz sliced cremini mushrooms
  • 2 tbsp butter
  • salt and pepper, to taste
  • 1 tsp chopped garlic
  • 1 tsp chopped thyme
  • 1 1/4 cup chicken broth
  • 2 tbsp butter
  • 1 cup couscous
  • 1 tbsp parsley, chopped

DIRECTIONS

  • Cook 8 ounces sliced cremini mushrooms in 2 tbsp butter in a large skillet over medium-high heat, 4 to 5 minutes. Season with salt and pepper.
  • Add 1 teaspoon each chopped garlic and thyme; stir 1 minute, then remove to a plate.
  • Place the broth and 2 tbsp butter into a large sauce pan and bring to a boil.
  • Add the couscous to the pan and stir well. Cover the pan with a lid and reduce the heat to low. Simmer 8 - 10 minutes, stirring occasionally. Stir in the chopped parsley and the mushrooms. Serve and enjoy.
