INGREDIENTS

  • 1 medium tomato, chopped
  • 1/4 red onion, chopped
  • 1 scallion, chopped or sliced
  • 1/2 jalapeno pepper, chopped
  • 1/8 tsp oregano leaves, dried
  • 1 clove garlic, finely chopped
  • 1 tsp fresh lime juice
  • 1 1/2 tsp olive oil
  • salt, to taste

DIRECTIONS

  • Chop each ingredient and add to a medium bowl, stirring to mix well after each addition.
  • Add the oregano, garlic, lime juice, and olive oil, stirring to mix well after each addition.
  • Add salt to taste.
  • Eat immediately or place in refrigerator for use later.
