  • 1/2 red onion, finely diced-
  • 3 jalapeno peppers, diced
  • 1 seedless cucumber, finely diced
  • 1 pound cooked shrimp
  • 2 cups DOLEĀ® Chef-Ready Cuts Pineapple Cubes
  • 2 limes, juiced
  • 2 tablespoons chopped fresh mint
  • 1/2 cup chopped fresh cilantro
  • 4 tostada shells
  • Salt and ground pepper, to taste


  • Combine red onion, jalapeno and cucumber in a large bowl. Add shrimp, pineapple cubes, lime juice, mint and cilantro, and season with salt and pepper.
  • Divide mixture into four portions and serve over four tostada shells.
