INGREDIENTS

  • 6 ancho chiles
  • 1/2 cup almonds or 1 cup pumpkin seeds or sesame seeds
  • 1 clove garlic, chopped
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground cinnamon
  • 2 tablespoons lard or oil
  • 2 cups chicken broth
  • Salt to taste
  • 3 pounds cooked chicken or turkey (pork or tongue is also good in this recipe)

DIRECTIONS

  • Wash chiles, removing the stems and reserving 1 tablespoon of the seeds. Place chiles in a saucepan and cover with water. Bring to a boil, reduce heat to medium, and cook for 5 minutes. Set aside to steep for 30 minutes.
  • In an ungreased skillet toast almonds and chile seeds over medium heat, stirring. Cool, place in a blender, and grind very fine. Remove chiles from saucepan and add to the blender together with the garlic, cloves, and cinnamon. Blend to a smooth puree, adding a small amount of liquid from the cooked chiles if necessary to facilitate the blending.
  • In a large skillet, heat the lard and saute the chile puree for approximately 3 minutes. Slowly stir in the chicken broth, bring to a boil, then reduce heat. Check the seasoning and add salt if necessary. Add the cooked meat and simmer until the meat is heated and the sauce has thickened.
