INGREDIENTS

  • New York Style Pizza Dough:
  • 1 cup lukewarm water
  • 2 Tbl. milk
  • 2 tsp. brown sugar
  • 1 tsp. salt
  • 1 Tbl. each shortening, cornmeal, extra virgin olive oil
  • 1 package active dry yeast
  • 3 cups all-purpose flour
  • 1 recipe Exquisite Pizza Sauce (search this site)
  • 1 4 oz. can black olives, chopped
  • 1 6 oz. can mushrooms, pieces and stems
  • 1/2 large bell pepper, chopped medium
  • 1 thick slice of onion cut into small slices
  • 2 patties of breakfast sausage, broken into small chunks
  • 8 oz mozzarella cheese, grated
  • 6 oz. pepperoni, sliced
  • Cornmeal for dusting
  • Olive oil

DIRECTIONS

  • In a large bowl, combine water, milk, brown sugar, salt and shortening and mix well with an electric mixer on low for about 1 minute. Add cornmeal, olive oil, and yeast and continue mixing for another minute. Let it dough rest for 5 minutes. Gradually add the remaining flour, mixing with your hands before adding more flour. Turn the dough out on a lightly floured surface and knead the dough for 8 to 10 minutes. (Knead the dough vigorously, don't be afraid of hurting the dough.)
  • Form the dough into a ball and place in a lightly greased covered bowl. Place the dough in a warm location (70° to 85°F), and let it rest for about 45 minutes. Push down the dough and make a 12 inch to 14 inch circle with your hands or a rolling pin. Sprinkle baking sheet with cornmeal place the dough on it. Let dough rest for another 45 minutes. Dough is now ready to make a pizza.
  • While the dough is rising, prepare the Exquisite Pizza Sauce per recipe instructions. (There will be enough for two pizza - the sauce freezes well.) Preheat oven to 550°F or highest temperature of oven, but not broil. Heat medium sized skillet over medium heat. Add about 1 Tbl. olive oil and heat. Add bell pepper and onion and toss to coat. Cook until pepper is just beginning to turn tender. Remove from heat.
  • Brush dough lightly with olive oil. Cover dough with pizza sauce. Loosely cover sauce with sausage, olives, pepper and onion, pepperoni and mozzarella cheese - and anything else you desire. Place pizza on lowest rack in oven for 7 minutes. Remove pizza and check bottom - should be browning nicely. Move pizza to middle rack and cook for 2 minutes. Remove from oven and check for doneness.
