INGREDIENTS

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 teaspoons salt, plus more to taste
  • 1/4 teaspoon pepper, plus more to taste
  • 1 (14.5-ounce) can chicken broth
  • 2 tablespoons canola oil
  • 6 (3/4-inch-thick) pork chops
  • 6 cups potatoes, peeled, thinly sliced
  • 1 medium onion, sliced
  • paprika, optional, to taste, for garnish
  • fresh parsley, optional, minced, to taste, for garnish

DIRECTIONS

  • Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.
  • In a small saucepan over medium heat, melt the butter. Stir in the flour, 1 1/2 teaspoons of the salt, and 1/4 teaspoon of the pepper until smooth. Add the broth and bring the mixture to a boil. Cook while stirring, until thickened, about 1 minute. Transfer the saucepan from the heat.
  • In a large skillet, heat the oil. Add the pork chops and cook until browned on all sides, about 3 minutes per side. Season the pork with the salt and the pepper.
  • Layer the potatoes and the onion in the prepared baking dish. Pour the broth mixture over the layers in the baking dish. Place the pork chops on top of the layers in the dish. Cover the baking dish and bake for 1 hour. Uncover and bake until the meat and potatoes are tender, and the pork reaches an internal temperature of at least 145 degrees F, about 30 minutes. Sprinkle with the paprika and the parsley.
