INGREDIENTS

  • 1 lb rigatoni pasta
  • 1 lb ground beef
  • 2 garlic cloves (minced)
  • 1/4 teaspoon fresh ground pepper
  • 1 small jar of spaghetti sauce
  • cooking spray
  • salt
  • 1 cup finely grated Parmesan cheese
  • 2 cups grated mozzarella cheese
  • 4 oz cream cheese
  • 15 oz ricotta cheese
  • 2 eggs
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 cup onion

DIRECTIONS

  • Cook the noodles according to the directions on the box.
  • Brown ground beef, drain. Add chopped onion and garlic. After about 5 minutes add your cream cheese and stir until melted. Add spaghetti sauce. Prepare cheese mixture in a small mixing bowl by mixing the ricotta, Parmesan, basil, oregano and 2 eggs until smooth then set aside.
  • Spray the bottom of a springform pan with cooking spray; if a springform pan is not available, a casserole dish may be used. Stand each piece of pasta on end to fill the pan. Fill a ziplock bag with the cheese mixture and close the bag. Snip one corner of the ziplock bag. Pipe a small amount of cheese mixture into each noodle. Poured the meat sauce over the top of the noodles and as possible press some of the meat mixture into each noodle.
  • Top with 2 cups of mozzarella. Bake in a 350°F oven for 20 minutes; turn the broiler on until the cheese starts to brown.
