INGREDIENTS

  • 1 quart milk
  • 1 cup sugar
  • 1 stick cinnamon
  • 1/4 cup finely ground almonds
  • 1 teaspoon vanilla extract
  • 8 egg yolks
  • 1 cup light rum, brandy, or grain alcohol

DIRECTIONS

  • Put milk, sugar, and cinnamon stick into a saucepan. Heat to simmering, and simmer gently, stirring constantly, about 10 minutes.
  • Remove from heat and remove cinnamon stick. Add almonds and vanilla extract.
  • Beat egg yolks until thick and lemon-colored. Gradually beat into milk. Return to heat and cook over low heat, stirring constantly, until mixture coats a spoon.
  • Cool to room temperature.
  • Mix in rum and pour into a large bottle with screw lid. Refrigerate until ready to serve.
