This Salmon and Potato Bake Recipe combinations potatoes and salmon in a casserole is a delicious and quick one dish meal that nicely incorporates onion, bell pepper, butter, milk and potato chips in this cassserole recipe.

INGREDIENTS

  • 4 tablespoons butter or margarine
  • 2 tablespoons cornstarch
  • 2 1/2 cups milk
  • 1 medium onion, chopped fine
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon minced green pepper
  • 4 cups thinly sliced raw potatoes
  • 1 can (1 pound) salmon, flaked
  • 1 cup crushed potato chips

DIRECTIONS

  • Melt butter and blend in cornstarch. Add milk, onion, salt, pepper, and green pepper. Cook, stirring constantly, until thickened.
  • Place alternate layers of potatoes, salmon with liquid from can, and sauce in greased casserole.
  • Cover, and bake in moderate oven (350°F.) about 20 minutes. Remove cover and sprinkle with potato chips. Bake until potatoes are tender, about 25 minutes.
