INGREDIENTS

  • 2 pounds sea trout (or other fish) fillets, fresh or frozen
  • 1/2 cup all-purpose cornmeal
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup vegetable oil
  • 1/2 cup finely chopped pecans
  • Pecan Rice (search recipes)
  • Lime wedges (garnish)

DIRECTIONS

  • Thaw fish if frozen. Preheat oven to 400 degrees. Skin fillets and cut into serving-sized portions.
  • Combine cornmeal, salt and pepper. Roll in cornmeal mixture. Place on a well-greased 15 x 10 x 1-inch baking pan. Pour oil evenly over fillets. Bake in a hot oven, 400 degrees, for 20 to 25 minutes or until fish flakes easily when tested with a fork.
  • Sprinkle pecans over fillets 2 to 3 minutes before end of cooking time. Serve with Pecan Rice. Garnish with lime wedges.
