INGREDIENTS

  • 1 9" pie shell
  • 5 1/2 oz, by weight, all-purpose flour
  • 2 Tbl. butter, unsalted, cold
  • 4oz, by weight, light brown sugar
  • 1/4 tsp. kosher salt
  • 3/4 tsp. baking soda
  • 8oz, by weight, molasses
  • 1 egg, beaten
  • 1 tsp. vanilla extract

DIRECTIONS

  • Make or buy a 9-inch pie crust. Thaw if necessary. Then dock the crust by punching holes into bottom and sides with tines of a fork. Line crust with parchment paper and fill with pie weights or beans and bake in 425°F oven for 10 minutes. Carefully remove weights and bake for another 7 minutes at 350°F.
  • In bowl of food processor, add flour, butter, brown sugar and salt. Process to combine. Remove 1/4 cup of mixture and set aside.
  • In large bowl, add baking soda. Top baking soda with 3/4 cup boiling water. Whisk. Add molasses, egg and vanilla extract. Whisk. Slowly add dry ingredients from processor bowl and whisk to combine.
  • Place pie crust on baking sheet. Pour contents of molasses mixture from bowl into pie crust. Sprinkle top of pie with the 1/4 cup reserved dry mixture, working from center of pie outward but leaving about 2 inches of pie no covered around the edge of the pie. Bake in oven for 40 to 45 minutes or until pie puffs slightly and begins to dry and crack on tip. Remove to wire rack and cook for 1 1/2 to 2 hours before serving.
