INGREDIENTS

  • 1 1/2 cups tomatoes, peeled, seeded, and finely chopped
  • Half a red bell pepper, minced
  • 2 tablespoons balsamic vinegar
  • 1/3 cup minced yellow onions
  • 1/4 cup olive oil
  • 1/2 to 3/4 teaspoon dried hot red pepper flakes
  • Freshly ground black pepper and salt to taste

DIRECTIONS

  • Combine tomatoes, onions, and red bell pepper in a bowl and set aside. In a small bowl whisk together vinegar, olive oil, hot pepper flakes, and black pepper. Pour over tomatoes and let marinate 30 minutes.
  • Add salt to taste just before serving.
