INGREDIENTS

  • 1 lb. fresh black-eye peas (see Note)
  • 1 tsp salt
  • 1/2 tsp fresh ground black pepper
  • 1/2 tsp thyme flakes
  • 1/8 tsp rosemary
  • 1/8 tsp rubbed sage
  • liquid from steamed peas

DIRECTIONS

  • Note: With this recipe the peas would ideally be steamed. If steaming utensils are not available, the peas may be cooked by placing into a suitable sized skillet, adding liquid to prevent burning, adding other ingredients and cooking over medium heat, stirring frequently, until the peas are tender, approximately 30 minutes.
  • Steam the peas until not quite tender. Transfer to a large skillet. Add just enough steaming liquid to prevent the peas from drying and burning. Place peas over medium heat.
  • Add other ingredients and stir well after each addition.
  • Add more liquid if necessary to prevent peas from burning. Cook until peas are very tender. Enjoy!!
