INGREDIENTS

  • 6 medium russet potatoes, washed and patted dried
  • 1 pound lean ground beef
  • 1 (1-ounce) packet taco seasoning
  • 2/3 cup water
  • Optional toppings:
  • shredded lettuce
  • cheddar cheese
  • sour cream
  • salsa
  • guacamole
  • green onion

DIRECTIONS

  • Preheat the oven to 400 degrees F. Wash potatoes shaking off excess water. Poke holes into potatoes using the tines of a fork. Sprinkle the potatoes with salt. Bake the potatoes for 1 hour 10 minutes.
  • About 15 minutes before the potatoes are done, place the hamburger meat into a large skillet and heat to medium-high. Stir and meat and crumble into smaller pieces as the meat begins to cook. Stir occasionally and cook until the meat is no longer pink. Drain the grease from the meat.
  • Add the taco seasoning and the water to the beef. Bring the mixture to a boil, then reduce the heat to low. Let simmer for 10 minutes.
  • When the potatoes are done, cut a slit from one end to the other in the top of each potato and press in on the two ends to open wide. Use a fork to loosen the inside of the potato from the peel. Fill the potatoes with the ground beef and add desired toppings. Serve!
